Sundals are simple to make, but make a healthy snack. I used to eat sundal as snack during my childhood atleast twice a week. Kadalai Sundal is my favourite and am going to share the simple sundal recipe here
Preparation Time: 3 hours
Cooking time : 20 minutes
Ingredients:
- Groundnut – 1 cup
- Red chillies – 2
- Grated coconut – 1/4 cup
- oil – 2 tsp
- Mustard seeds – 1/2 tsp
- Split Urad dal – 1 tsp
- Curry leaves – 1 spring
- Asafoetida/hing – 1/4 tsp
- Salt – to taste
- Water – as required
Pre-preparation:
Wash and Soak the groundnut for 2-3 hours
Method:
- Pressure cook the soaked peanuts for 4-5 whistles with salt and water(use the soaked water)
- Once the pressure releases naturally, open the cooker and drain the water
- Heat a pan and add oil
- Add mustard seeds, urad dal,hing and curry leaves
- Add grated coconut and saute well for 30 seconds
- Finally add groundnuts and mix everything well.switch off the stove after 1 minute
- Serve it hot
Notes:
if you use fresh groundnut, there is no need to soak, u can pressure cook it directly.
