Peanut Sundal/Verkadalai Sundal

Sundals are simple to make, but make a healthy snack. I used to eat sundal as snack during my childhood atleast twice a week. Kadalai Sundal is my favourite and am going to share the simple sundal recipe here

Preparation Time: 3 hours

Cooking time : 20 minutes

Ingredients:

  1. Groundnut – 1 cup
  2. Red chillies – 2
  3. Grated coconut – 1/4 cup
  4. oil – 2 tsp
  5. Mustard seeds – 1/2 tsp
  6. Split Urad dal – 1 tsp
  7. Curry leaves – 1 spring
  8. Asafoetida/hing – 1/4 tsp
  9. Salt – to taste
  10. Water – as required

Pre-preparation:

Wash and Soak the groundnut for 2-3 hours

Method:

  1. Pressure cook the soaked peanuts for 4-5 whistles with salt and water(use the soaked water)
  2. Once the pressure releases naturally, open the cooker and drain the water
  3. Heat a pan and add oil
  4. Add mustard seeds, urad dal,hing and curry leaves
  5. Add grated coconut and saute well for 30 seconds
  6. Finally add groundnuts and mix everything well.switch off the stove after 1 minute
  7. Serve it hot

Notes:

if you use fresh groundnut, there is no need to soak, u can pressure cook it directly.
