I like Thai food very much. I used to try those recipes at home. Mostly, i bought readmade paste and do the cooking. Whenever i got fresh ingredients, i prepare it from scratch. This is one such recipe i tried thrice and this time it came out really well. Do try this aromatic recipe
Preparation time : 10 minutes
Cooking time : 15 + 15 mins
Ingredients:
- Rice – 200 gm
- Galangal or Blue ginger – 3 inch piece
- Kaffir lime leaves – 5
- Lemon grass – 2 stalks
- Thai chilli – 4
- Shallots – 5 + 3
- Vegetable stock cubes – 1
- Garlic – 5 + 4 pods
- Palm sugar or Coconut sugar – 1 tsp
- Tamarind pulp – 50 ml
- Tomato – 1
- Mix vegetables – 1 cup of your choice( i used beans, carrot, snowpeas and capsicum)
- oil – 4 tsp
- Salt – to taste
- Water – as needed
Pre-Preparation:
- Wash and cook the rice. Let it cool down
- Add vegetable stock cube in tamarind pulp, add salt and sugar to it and dissolve completely
- Remove the woody outer layer of lemongrass and finely chop the whites, cut the 5 shallots, 5 garlic pods, galangal and kaffir lime leaves. Use the above tamarind mixture and grind this to a fine paste

Method:
- Heat a pan and add 4 tsp of oil to it
- Add the remaining shallots and garlic (finely chopped) and cook until lightly browned and add finely chopped tomatoes
- Add the tom yum paste and stir occasionally
- Add vegetables and stir to cook for 3 minutes
- Finally add the cooked rice to it, check the salt, if you want more add salt this time
- Switch off the flame, serve and enjoy!
Tips:
- You can use thai rice, if u get it
- You can add pineapple chunks and scrambled eggs also
- You can use leftover rice for this recipe
