Veg Tom yum Fried Rice

I like Thai food very much. I used to try those recipes at home. Mostly, i bought readmade paste and do the cooking. Whenever i got fresh ingredients, i prepare it from scratch. This is one such recipe i tried thrice and this time it came out really well. Do try this aromatic recipe

Preparation time : 10 minutes

Cooking time : 15 + 15 mins

Ingredients:

  1. Rice – 200 gm
  2. Galangal or Blue ginger – 3 inch piece
  3. Kaffir lime leaves – 5
  4. Lemon grass – 2 stalks
  5. Thai chilli – 4
  6. Shallots – 5 + 3
  7. Vegetable stock cubes – 1
  8. Garlic – 5 + 4 pods
  9. Palm sugar or Coconut sugar – 1 tsp
  10. Tamarind pulp – 50 ml
  11. Tomato – 1
  12. Mix vegetables – 1 cup of your choice( i used beans, carrot, snowpeas and capsicum)
  13. oil – 4 tsp
  14. Salt – to taste
  15. Water – as needed

Pre-Preparation:

  1. Wash and cook the rice. Let it cool down
  2. Add vegetable stock cube in tamarind pulp, add salt and sugar to it and dissolve completely
  3. Remove the woody outer layer of lemongrass and finely chop the whites, cut the 5 shallots, 5 garlic pods, galangal and kaffir lime leaves. Use the above tamarind mixture and grind this to a fine paste
  4. cut the vegetables

Method:

  1. Heat a pan and add 4 tsp of oil to it
  2. Add the remaining shallots and garlic (finely chopped) and cook until lightly browned and add finely chopped tomatoes
  3. Add the tom yum paste and stir occasionally
  4. Add vegetables and stir to cook for 3 minutes
  5. Finally add the cooked rice to it, check the salt, if you want more add salt this time
  6. Switch off the flame, serve and enjoy!

Tips:

  1. You can use thai rice, if u get it
  2. You can add pineapple chunks and scrambled eggs also
  3. You can use leftover rice for this recipe
