This is very simple and delicious recipe. Paniyarams are really soft and healthy. I use the same batter to make dosais also. Do try this millet recipe
Preparation time : 20 minutes + 8 hours (Batter preparation)
Cooking time: 5 minutes /batch
Ingredients:
- Jowar/ Cholam – 2 cups
- Idli Rice – 1/4 cup
- Raw rice – 1/4 cup
- Urad dal – 1/2 cup
- Fenugreek seeds – 1/2 tsp
- Salt – to taste
To temper:
- Onion -1 finely chopped
- Ginger – 1 inch finely chopped
- Green chilli – 2 finely chopped
- Curry leaves – a spring
- Salt – to taste
- Mustard seeds – 1/2 tsp
- Urad dal – 1/2 tsp
- Channa dal – 1/2 tsp
- Cumin seeds – 1/2 tsp
- Hing – 1/4 tsp
Method:
- Wash and Soak Jowar atleast for 6 hours in a vessel
- Wash and Soak Urad dal and methi seeds in a vessel and rice in separate vessel
- Grind everything separately in mixie or wet grinder and mix it together
- Add salt and let it ferment fro 6 to 8 hrs (based on the weather)
- Once the batter is fermented mix it well
- Take the required amount of batter in a vessel to make paniyarams
- Heat 2 tsp of oil in a kadai and add items to temper
- Saute everything well and switch it off
- Once it is cooled, add it to the batter in the vessel
- Heat the paniyaram pan and add oil to each hole
- Pour batter in each hole and cook it closed for 2 minutes
- Open the lid and flip it to other side and cook for 2 minutes or cook till it become golden brown
- Remove it from pan and serve it with your favourite chutney
- You can make Dosa from the same batter
