Chilli Bajji/Milaga Bajji

Hot Bajji is everyone’s favourite. It is a perfect evening time snack with hot tea. Today it is raining here, so i made it and post it here.

Ingredients:

  1. Chillies/Bajji Milagai – 5
  2. Gram flour/Besan Flour/Kadalai maavu – 1 cup
  3. Rice flour/Arisi Maavu – 1/4 cup
  4. Chilli Powder – 2 tsp
  5. Asafoetida/Hing powder – 1/4 tsp
  6. Baking soda – a pinch (optional)
  7. Food colour – a pinch(optional)
  8. Salt – to taste
  9. Oil – required to fry

Pre-preparation:

  1. cut and slit chillies and deseed it(it reduce the spiciness)
  2. this step is pure optional. you can put the bajji milagais in boiled salt water for 3 minutes and drain it

Method:

  1. Mix Besan flour , rice flour , chilli powder and salt with water
  2. The batter should be thick not watery. Batter should be coated with vegetable
  3. Heat oil in a pan
  4. Dip the chillies in batter and fry it in oil for 2 minutes
  5. Turn the bajjis and cook for another 2 minutes
  6. Drain the bajjis in paper towel and serve it

Tips:

  1. While preparing bajji batter, i used to add 3/4 cup of water for 1 cup flour. check the consistency
  2. The oil should be hot for frying bajjis, check it by adding a drop of batter in oil, if it increases immediately to the surface , then it is perfect to fry bajjis .
  3. Else you should wait for few seconds and check it again before frying bajjis
