Hot Bajji is everyone’s favourite. It is a perfect evening time snack with hot tea. Today it is raining here, so i made it and post it here.
Ingredients:
- Chillies/Bajji Milagai – 5
- Gram flour/Besan Flour/Kadalai maavu – 1 cup
- Rice flour/Arisi Maavu – 1/4 cup
- Chilli Powder – 2 tsp
- Asafoetida/Hing powder – 1/4 tsp
- Baking soda – a pinch (optional)
- Food colour – a pinch(optional)
- Salt – to taste
- Oil – required to fry
Pre-preparation:
- cut and slit chillies and deseed it(it reduce the spiciness)
- this step is pure optional. you can put the bajji milagais in boiled salt water for 3 minutes and drain it
Method:
- Mix Besan flour , rice flour , chilli powder and salt with water
- The batter should be thick not watery. Batter should be coated with vegetable
- Heat oil in a pan
- Dip the chillies in batter and fry it in oil for 2 minutes
- Turn the bajjis and cook for another 2 minutes
- Drain the bajjis in paper towel and serve it

Tips:
- While preparing bajji batter, i used to add 3/4 cup of water for 1 cup flour. check the consistency
- The oil should be hot for frying bajjis, check it by adding a drop of batter in oil, if it increases immediately to the surface , then it is perfect to fry bajjis .
- Else you should wait for few seconds and check it again before frying bajjis
