Sweet potato poli or sakkaravalli kizhangu poli is an indian flat bread variety with sweet stuffing inside. There are many varieties of Poli – paruppu poli, coconut poli, dry fruits poli etc., made during festival time. Today i tried sweet poli using sweet potato, jaggery and coconut and it came out well. Sweet potato has many health benefits. For the dough, i tried using maida. You can replace it with atta/multimillet flour. Here is the recipe

Ingredients:
For Dough:
- Maida – 1 cup
- Salt – to taste
- Water – required
- Ghee – 5 tsp (2 tsp + 3 tsp)
- Food color – a pinch (optional)
For the stuffing:
- Sweet potato – 1 big in size
- Grated coconut – 1/4 cup
- Grated jaggery – 1/4 cup
- Cardomom powder – 1/2 tsp
Pre-preparation:
- First make the dough, add salt and water to maida and knead well. Apply 2 tsp of ghee to it and rest for atleast 1 hr( 1-2 hrs)
- Boil the sweet potato and remove the skin and mash it well
Method:
- Heat a kadai and add jaggery and sprinkle little water to make syrup.
- Once the jaggery dissolved, add mashed sweet potato to it and mix well
- Add cardomom powder and coconut to it and mix everything well
- Keep stirring the mixture till it becomes thick. It will take 5-8 mins in medium flame
- Switch off the flame and let the mixture cool
- Make small balls from the mixture and keep it(made 6 balls from the stuffing i made)
- Make balls from maida dough and flatten it thick, keep the stuffing inside and cover it
- Dust it with flour and roll it like stuffed chapati
- Carefully transfer it to Dosa tawa and cook it in medium flame and apply ghee to it
- press the poli gently in between and cook it in both sides till it get brown spots on both sides
- Do the same procedure for remaining balls and serve it hot or cold.
