Rava idli is one of the popular Indian breakfast . Making rava idli is very simple(not like traditional idli). We can made it in a jiffy. I used to make rava idli using readymade rava idli mix. Today I tried this in home for dinner and it came out super soft and tasty. I am going to share the recipe with you all.

Cooking Time : 10 minutes
Yields : 10 Idlies
Ingredients:
- Rava/suji/semolina – 1 cup(200 gms)
- curd – 3/4 cup( sour or not sour according to your taste, i added non-sour)
- Water – to adjust consistency
- Ginger – 2 tsp finely chopped
- Green chillies – 2 nos finely chopped
- Eno fruit salt – 1 tsp
- Salt – to taste
To temper:
- Oil – 1 tsp
- Mustard seeds – 1/2 tsp
- Split urad dal – 1/2 tsp
- Chanal dal – 1/2 tsp
- Asafoetida – a pinch
- Cashews – 10 nos finely chopped
- Turmeric powder – 1/4 tsp(optional)
- curry leaves – a spring
Method:
- Heat oil in a kadai and add mustard seeds
- once it splutters, add items one by one in to temper list and roast nicely
- Add rava to it and roast it nicely. Don’t burn it
- switch off the flame and cool the mixture
- Once it is cooled, add curd to it and add salt. Mix it well, add water to adjust the consistency
- Let the batter sit for 10 minutes
- After that , take the Idli pan and fill the bottom with water
- Grease the idli moulds with oil/ghee and get it ready
- open the batter and check the consistency. The batter should be like Idli batter consistency. If not, then add little water
- Add Eno salt and mix well. this salt makes the batter frothy
- Fill the Idli moulds with batter and cook it in medium flame for 7-10 minutes
- To check if the Idli is done, insert a knife or back of spoon to idli, it comes out clean
- Switch off the flame and wait for 5 minutes.
- Remove the Idlis from mould and serve it with your favourite chutney/sambar/ Idli podi.
