This Porridge is made with coconut milk and it tastes too good. This can be served as breakfast or light dinner. My Mother-in -law shared this recipe with me and I am going to share it with all. Here is the recipe.
Preparation time : 10 minutes
Cooking time : 30 minutes
Serves : 2
Ingredients:
- Kerala Matta rice – 1 cup (150 gms)
- Mung bean – 1/3 cup (50 gms)
- Coconut milk – 1.5 cups( both thick and thin)
- Jaggery – 4 tsp (optional)
- Salt – a pinch
Preparation:
- Wash rice and mung bean well
- Add it to pressure cooker and add 4 cups of water
- Pressure cook it in medium flame and cook for 3 whistles
- switch off the flame and wait till pressure release
- Open the lid and mash the mixture well
- Add salt and coconut milk, add water to adjust the consistency and keep it in medium flame, but dont boil it
- Switch off the flame, add jaggery and serve it
