This dish is very healthy since it contains lot of vegetables and it is a 2 in 1 dish. Yes it goes well with rice items and chapathi.please try this and let me know your comments
Preparation Time – 15 minutes
Cooking time – 20 minutes
Ingredients:
- Onion – 1
- Tomatoes – 2 (bigger one)
- Beans – 4
- carrot – 1
- Baby corn – 5
- Capsicum – 1 ( I used few amounts of red, green and yellow)
- Ginger garlic – 3/4 tsp
- Kasuti methi – 1 tsp
- turmeric powder – 1/4 tsp
- Chilli powder – 1 tsp
- Garam masala – 1/2 tsp
- oil – 4 tsp
- Salt – to taste
To temper:
- Fennel seeds/sombu – 1/2 tsp
- Cumin seeds/jeera – 1/2 tsp
Method:
- Heat oil in a kadai and add items to temper
- Add thinly sliced onions and saute well
- Add ginger garlic paste
- Grind the tomatoes in a mixer and make it into a fine paste
- Add all the veggies to the kadai and add tomato puree. mix everything well
- Add all the spice powders and salt and saute well
- Add litle amount of water and close the lid
- cook it in medium flame for 5-8 minutes. Stir it occasionally
- once all veggies cooked, garnish it in kasuri methi and switch off the flame
- Mixed vegetable gravy is ready

Tips:
- You can add veggies of your choice like Cabbage, beetroot, potato, peas, paneer , brocolli n cauliflower
- you can add sliced ginger and garlic instead of paste
- Slice the vegetables in thin and even size to get it cooked fast and better taste. Use the vegetable shredder if you have
