Sweet pongal is a delicacy made from newly harvested rice. It is cooked with jaggery, ghee and cashew nuts and is offered to sun god during the festival of pongal.
Ingredients:
Raw rice – 1/2 cup
Moong dal/ Pasi paruppu- 1/4 cup
Jaggery – 1 cup
Cardomom – 2 pods
Cashew – 10 nos
Raisin – 10 nos
Ghee- 1/4 cup
Method:
Dry roast rice and moong dal separately
Pressure cook Rice and dal with 3 cups of water for 5 whistles
once the pressure released, mash the dal and rice well
In a wide pan add 1/4 cup of water and add jaggery. when it dissolves remove the impurities and heat the jaggery water in medium flame for 3-5 mins and add the crushed cardomom pods to it
Add the mashed dal and rice mixture to it. cook for few minutes till everything blends well
Fry cashew nuts in one tsp of ghee and add the nuts to pongal
Fry raisins in ghee till it popped up and add that to the pongal
Add the remaining ghee to pongal and cook for 3 mins in medium flame
Enjoy delicious Sweet pongal
